Welcome to JOYFUL REFLECTIONS. Also welcome to JUNE. My blog picture shows a gorgeous picture of my favorite AZALEA, named the FLAME AZALEA. I took this picture this past month when we were at Biltmore on 5/17/23.

Hoppin' John on New Year's Day
Happy New Year!!!!! What foods are you serving today???? Since I'm a southern gal, I will fix our traditional New Year's dish, Hoppin' John!!!!! George and I want to be sure and take in all of the 'good luck' we can today!!!! My Hoppin' John is a casserole made with black-eyed peas, rice, onions, bacon, ham, kielbasa (or smoked sausage), and any spices I want to add. I have the recipe written out as to what I do step by step---so if you want it, please email me (email@example.com) and I'll send it to you. It's REALLY good, and even if you don't care for black-eyed peas, you'll like this dish!!!!
